One of the most important tools we use to maximize enjoyment of our beers is the bottle cradle. We're happy to now be able to offer them to you. Because we referment our beer in bottle for more than 6 months to generate carbonation and refine the flavour of the beer there is often sediment, called Lees, left behind in the beer. The best way to enjoy these beers is to carefully pour the bottle without agitation and set it in the cradle so the sediment doesn't end up in your glass. Some people enjoy drinking the lees, but if you prefer not to drink the lees we recommend leaving 25ml to 50ml of beer in the bottle.
